LUA by Luke Nguyen is a contemporary waterfront restaurant for Doltone Hospitality Group, located within the Sydney Fish Market. Conceived as a refined dining room with an associated alfresco terrace, the venue balances the intensity of open-fire cooking with a calm and highly resolved architectural interior. The material palette draws from timber, stone and ceramic, with subtle references to Vietnamese craft embedded through detailing and texture. Three-dimensional ceramic wall tiles, layered rear bar joinery and finely resolved timber elements create depth throughout the space, while oak furniture and banquette seating introduce warmth against the rawness of charcoal cooking. At the centre of the venue, the open kitchen is anchored by a commercial hood referencing traditional French fireplace typologies a subtle acknowledgement of the historical French influence within Vietnamese culture. Lighting is fully integrated into the architecture, with the ceiling conceived as a sculptural light installation that diffuses illumination evenly across the dining room. Along the waterfront edge, Vietnamese parasols soften the transition between the interior dining room and the openness of Blackwattle Bay.
